Water temperature and its effects

Just been watching Will Raisons latest video on F1's in winter and he did a piece on checking the water temperature with a digital thermometer to gauge whether to fish conservatively or to be a bit more adventurous.

Does anyone else do this and rely on it or is it just another element of watercraft to be considered as a whole?

Is it only of use when lower water temperstures are likely or also in the height of summer?

Also, do you try it at different depths to try and identify thermoclines which might indicate a better depth to fish in?

I have a digital thermometer and use it on the odd occasion if it’s fishing well in the margins in summer
